Ingredients

  • 2–3 lbs boneless, skinless chicken breasts or thighs

  • 1 cup chicken broth

  • 2 packets dry Italian dressing seasoning mix

  • 2 (10.5 oz) cans Campbell's Golden Mushroom Soup

  • 1 (8 oz) container chive and onion cream cheese

  • 1 lb spaghetti

  • Freshly grated Parmesan cheese, for serving

Instructions

Step 1: Prepare the Chicken

Place the chicken breasts or thighs in the bottom of a 6-quart or larger slow cooker, arranging them in an even layer.

Step 2: Make the Sauce

In a medium mixing bowl, whisk together the chicken broth, Italian dressing seasoning packets, and golden mushroom soup until well combined.

Pour the mixture evenly over the chicken, making sure each piece is coated.

Step 3: Slow Cook

Cover and cook on LOW for 6–7 hours, or until the chicken is tender and reaches an internal temperature of 165°F.

Step 4: Add the Cream Cheese

Once the chicken is fully cooked, add the container of chive and onion cream cheese directly on top of the chicken.

Replace the lid and allow the cream cheese to warm and soften for approximately 10–15 minutes.

Step 5: Shred the Chicken

Stir the softened cream cheese into the sauce until fully incorporated.

Using two forks or a pair of tongs, gently shred or break the chicken into bite-sized pieces directly in the slow cooker.

Stir everything together until the chicken is evenly coated in the creamy sauce.

Step 6: Prepare the Pasta

While the cream cheese is melting, bring a large pot of salted water to a boil.

Cook the spaghetti according to package directions until al dente.

Before draining, reserve approximately ½ cup of pasta water in case you need to thin the sauce.

Step 7: Combine

Add the cooked and drained spaghetti directly to the slow cooker.

Using tongs, gently toss the spaghetti with the chicken and sauce until everything is evenly coated.

If the sauce seems too thick, add a small splash of reserved pasta water or additional chicken broth until it reaches your desired consistency.

Step 8: Serve

Serve immediately with a generous sprinkle of freshly grated Parmesan cheese.

Enjoy!

Shell's Recipe Tips & Notes

Chicken Breasts vs. Thighs

Both work wonderfully in this recipe! Chicken breasts provide a leaner option, while chicken thighs tend to stay extra tender and juicy during slow cooking.

Don't Skip the Chive & Onion Cream Cheese!

This is one of the ingredients that makes this recipe special. It adds creaminess along with a subtle onion and herb flavor that complements the Italian seasoning.

Cook the Pasta Separately

For the best texture, cook the spaghetti on the stovetop and add it to the slow cooker just before serving. This prevents the pasta from becoming overly soft or absorbing too much sauce.

Adjusting the Sauce

The sauce will naturally thicken as it cools and as the pasta absorbs some of the liquid. If needed, stir in a little warm chicken broth or reserved pasta water to bring back that creamy consistency.

Watch the Salt

The Italian dressing packets and canned soup already contain a good amount of sodium. Taste the finished sauce before adding any additional salt.

Storage & Reheating

Refrigerator: Store leftovers in an airtight container in the refrigerator for up to 3–4 days.

Freezer: For best results, freeze the chicken and sauce separately from the spaghetti for up to 2–3 months. Cream-based sauces may separate slightly after thawing.

Reheating: Warm leftovers gently on the stovetop or in the microwave, adding a splash of chicken broth or milk to loosen the sauce as needed. Reheat until thoroughly hot.

What to Serve with Angel Chicken

This creamy pasta dish is delicious on its own, but you can easily round out the meal with:

  • A simple garden salad with Italian dressing

  • Roasted broccoli or asparagus

  • Garlic bread or warm dinner rolls

  • Steamed green beans

  • A fresh Caesar salad
