Ingredients
For the beef
3–4 lb chuck roast
1 packet onion soup mix
2 cups low-sodium beef broth
1 cup beef consommé
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
4 cloves garlic, minced
1 teaspoon black pepper
1 teaspoon dried thyme
1 onion, sliced
For serving
6–8 hoagie rolls or bakery sub rolls
8 slices provolone cheese
2 tablespoons butter, melted
1 teaspoon garlic powder
Optional: crispy onions or sautéed onions for topping
Instructions
Add sliced onion to the bottom of the slow cooker.
Place chuck roast on top.
Pour in beef broth, consommé, Worcestershire, soy sauce, garlic, pepper, thyme, and sprinkle onion soup mix over everything.
Cook:
LOW for 8–9 hours
HIGH for 5–6 hours
Shred beef directly in the slow cooker and let it soak in the juices for 10–15 minutes.
Mix melted butter + garlic powder. Brush onto rolls.
Add shredded beef and provolone to rolls.
Optional but HIGHLY worth it: place assembled sandwiches under broiler 1–2 minutes until cheese melts and bread gets lightly golden. (Quick, minimal heat, huge payoff.)
Serve with small bowls of strained au jus for dipping.
