Prep Time: 15 minutes
Cook Time: 2½–3 hours on LOW
Total Time: About 3 hours
Servings: 10–12
Cake
1 box (15.25 ounces) yellow cake mix
Ingredients called for on the cake mix box (typically eggs, oil, and water)
Graham Cracker Streusel
1 cup finely crushed graham crackers
¼ cup light brown sugar
4 tablespoons unsalted butter, melted
Pinch of salt
Topping
1½ cups semi-sweet chocolate chips
3–4 cups mini marshmallows
Instructions
Lightly grease a 5- to 6-quart slow cooker with nonstick cooking spray or butter.
Prepare the yellow cake mix according to the package directions. Pour the batter into the prepared slow cooker and spread it into an even layer.
In a small bowl, combine the crushed graham crackers, brown sugar, melted butter, and a pinch of salt until the mixture resembles coarse crumbs.
Sprinkle the graham cracker streusel evenly over the cake batter.
Cover and cook on LOW for about 2 to 2½ hours, or until the cake is mostly set around the edges but still slightly soft in the center.
Sprinkle the chocolate chips evenly over the top, followed by the mini marshmallows.
Cover and continue cooking for an additional 20–30 minutes, or until the chocolate is melted and the marshmallows are soft and lightly golden.
Turn off the slow cooker and let the cake rest for 10–15 minutes before serving.
Scoop into bowls while still warm and enjoy!
Michelle's Tips
Every slow cooker cooks a little differently, so begin checking for doneness around the 2-hour mark.
If your marshmallows brown too quickly, place a sheet of foil loosely under the lid for the final 20 minutes.
For extra chocolate flavor, use a combination of semi-sweet and milk chocolate chips.
Allowing the cake to rest for 10–15 minutes helps the chocolate thicken slightly while keeping everything warm and gooey.
