Ingredients
For the Chicken
2–3 pounds boneless, skinless chicken thighs
1 packet ranch seasoning mix
1 bottle sweet chili sauce
1 (8-ounce) block cream cheese
For Serving
Cooked jasmine rice
Steamed green beans
Instructions
Add the chicken. Place the chicken thighs in the bottom of your slow cooker.
Layer the ingredients. Sprinkle the ranch seasoning evenly over the chicken. Pour the sweet chili sauce over the top, then place the block of cream cheese on top.
Slow cook. Cover and cook on LOW for 5–6 hours, or until the chicken is cooked through and tender.
Shred and stir. Once the chicken is cooked, shred it directly in the slow cooker using two forks. Stir everything together until the cream cheese is completely incorporated and the sauce is smooth and creamy.
Serve. Spoon the sweet chicken over cooked jasmine rice and serve with steamed green beans.
