Slow Cooker Chicken Pot Pie with Mini Gnocchi

All the cozy flavors of chicken pot pie without making a pie crust! Tender chicken, potatoes, carrots and celery cook all day in a creamy chicken broth, then mini gnocchi are added at the very end for the perfect little pillowy bites.
This is an easy, hearty slow cooker dinner that's perfect for a chilly night—and exactly the kind of meal we love at Shell's Supper Club.
Ingredients
2 large boneless, skinless chicken breasts
1 medium potato, peeled and diced
3 carrots, peeled and diced
3 celery stalks, diced
1 yellow onion, diced
1 can drained whole kernel corn
2 (10.5 oz) cans cream of chicken soup
3 cups chicken broth
Roast chicken seasoning, to taste
1 (16–17.5 oz) package mini gnocchi
Instructions
Load the slow cooker. Add the chicken breasts to the bottom of the slow cooker. Add the diced potato, carrots, celery, onion and carrot.
Add the creamy base. Spoon the cream of chicken soup over the chicken and vegetables, then pour in the chicken broth. Season generously with roast chicken seasoning.
Slow cook. Cover and cook on LOW for approximately 7 hours, or until the chicken is cooked through and tender and the vegetables are soft.
Shred the chicken. Remove the chicken breasts from the slow cooker and shred using two forks. Return the shredded chicken to the slow cooker and stir everything together.
Add the gnocchi. Stir in the mini gnocchi. Cover and continue cooking just until the gnocchi are tender and cooked through, approximately 5–10 minutes, depending on the brand and size.
Serve. Give everything a good stir, taste and adjust the seasoning if needed. Ladle into bowls and serve warm.
Shell's Notes
Watch those gnocchi! They cook quickly and will continue to soften as they sit, so add them right before you're ready to eat.
Want it thinner? Add an extra splash of chicken broth before serving.
Want it extra creamy? A splash of heavy cream or half-and-half stirred in at the end would be delicious, but the cream of chicken soup already gives the broth plenty of richness.
Leftovers: The gnocchi will absorb some of the broth as the soup sits. Add a little chicken broth when reheating to loosen it back up.
