Coconut Lime Rice

It pairs perfectly with Slow Cooker Caribbean Jerk chicken

Ingredients (Serves 4–6):

  • 1 cup jasmine rice, rinsed

  • 1 cup coconut milk

  • ½ cup water

  • ¼ cup fresh lime juice

  • 1 tsp lime zest (plus extra for garnish if desired)

  • ½ tsp salt (or to taste)

  • Optional: 2–3 tsp sugar for a lightly sweet finish

Instructions

  1. Rice Cooker Instructions
    Add rinsed rice, coconut milk, water, lime juice, salt, and optional sugar to the rice cooker. Stir briefly and cook according to your rice cooker settings. Once cooked, fluff with a fork and stir in lime zest before serving.

  2. Stovetop Instructions
    Add rice, coconut milk, water, lime juice, salt, and optional sugar to a medium saucepan and stir. Bring to a gentle boil, then reduce heat to low and cover. Cook for 15–18 minutes, or until liquid is absorbed. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and stir in lime zest before serving.

  3. Optional Serving Tip:
    Top with fresh cilantro or extra lime zest for a bright, tropical finish.
