Ingredients
2 pounds boneless, skinless chicken breasts or thighs
8 ounces cream cheese, cubed
¾ cup buffalo wing sauce
1 packet ranch seasoning mix
2 cups low-sodium chicken broth
16 ounces dry orzo
2 to 2½ cups additional low-sodium chicken broth
1½ cups shredded sharp cheddar cheese
½ cup shredded mozzarella cheese
Sliced green onions, for garnish
Crumbled blue cheese, for garnish (optional)
Instructions
Place the chicken breasts in the bottom of your slow cooker. Add the buffalo sauce and ranch seasoning, and 1 cup of chicken broth.
Cover and cook on Low for 5–6 hours or High for 3–4 hours, until the chicken is cooked through and shreds easily.
Remove the chicken, shred it with two forks, and return it to the slow cooker. Stir until the cream cheese is fully incorporated and the sauce is smooth.
Stir in the dry orzo along with additiona 1 & 1/2 cups chicken broth (you may need more to ensure orzo cooks) . Cover and cook on High for 20–30 minutes, stirring once or twice, until the orzo is tender. If the mixture becomes too thick, add a splash of additional broth as needed.
Stir in the cheddar and mozzarella cheeses until melted and creamy.
Serve immediately, topped with sliced green onions and crumbled blue cheese, if desired.
Tips
Use freshly shredded cheese for the smoothest, creamiest sauce.
Orzo continues to absorb liquid as it sits. If the pasta thickens after serving, simply stir in a little warm chicken broth to loosen it back up.
Adjust the heat by adding a little extra buffalo sauce before serving if you like it spicier.
Serving Suggestions
Pair with garlic bread, a crisp green salad, celery and carrot sticks with ranch, or roasted broccoli for a complete meal.
Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of chicken broth or milk to restore the creamy consistency.
