Slow Cooker Beef Gyros

Tender, flavorful beef with Mediterranean spices—these slow cooker gyros are perfect for busy days. Just shred and serve with pita, tzatziki, and fresh veggies.
Ingredients (Serves 4–6):
2 lbs beef chuck roast or flank steak
1 medium onion, thinly sliced
3 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon red wine vinegar or lemon juice
1 tablespoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 cup beef broth
Instructions:
Place sliced onions in the bottom of your slow cooker.
Add beef on top and sprinkle with garlic, oregano, salt, pepper, cumin, and paprika.
Drizzle olive oil, vinegar (or lemon juice), and beef broth over everything.
Cover and cook on Low for 7–8 hours or High for 4–5 hours, until beef is fork tender.
Shred beef in the slow cooker and stir to coat in juices.
To Serve:
Warm pita or naan bread
Tzatziki sauce
Sliced cucumbers and tomatoes
Red onion slices
Feta cheese crumbles
Fresh dill or parsley (optional)
Tips & Storage:
Make it a freezer meal: Combine all ingredients (except broth) in a freezer bag. Thaw, add broth, and cook.
Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
