Slow Cooker French Onion Meatloaf

If you love French onion soup and classic meatloaf, this one was basically destined to happen.

This slow cooker French Onion Meatloaf is packed with savory flavor, with Swiss cheese tucked right into the meatloaf and a layer of melted Swiss on top. It cooks slowly over sliced onions and gets finished with French onion soup for an easy, cozy dinner that feels like a little more effort than it actually is.

Serve it with mashed potatoes and green beans for the ultimate comfort-food dinner.

Ingredients

  • 1 yellow onion, sliced

  • 2 pounds ground beef

  • 1 envelope French onion soup mix

  • ¾ cup Italian breadcrumbs

  • 2 large eggs

  • ¾ cup milk

  • 1 tablespoon Worcestershire sauce

  • 8 slices Swiss cheese, divided

  • 1 (10.5-ounce) can condensed French onion soup

Instructions

1. Start with the onions

Place the sliced yellow onion evenly across the bottom of your slow cooker.

2. Make the meatloaf mixture

In a large bowl, gently combine the ground beef, French onion soup mix, Italian breadcrumbs, eggs, milk, and Worcestershire sauce.

Mix just until everything is combined. Be careful not to overmix, as this can make the meatloaf dense.

3. Add the Swiss cheese

Cut 4 slices of Swiss cheese into small cubes. Gently fold the cheese into the meat mixture.

4. Shape the meatloaf

Form the mixture into a loaf and carefully place it on top of the sliced onions in the slow cooker.

5. Add the French onion soup

Pour the entire can of condensed French onion soup over the top of the meatloaf.

6. Slow cook

Cover and cook on LOW for 6–7 hours, or until the center of the meatloaf reaches 160–165°F.

Cooking time can vary depending on the size and shape of your meatloaf and your slow cooker.

7. Add MORE cheese

About 20 minutes before serving, place the remaining 4 slices of Swiss cheese over the top of the cooked meatloaf.

Cover and continue cooking until the cheese is completely melted.

8. Rest, slice & serve

Carefully remove the meatloaf from the slow cooker and let it rest for about 5–10 minutes before slicing.

Spoon some of the tender onions and flavorful cooking juices over each slice.

Serve with mashed potatoes and green beans and prepare yourself for the inevitable request for seconds.
