Slow Cooker Chicken & Stuffing
A cozy, no-fuss slow cooker dinner with tender chicken, creamy sauce, savory stuffing, and green beans all cooked together. It’s basically Thanksgiving comfort food without waiting for November.

Ingredients
2–3 lbs boneless, skinless chicken thighs
2 (10.5-oz) cans cream of chicken or cream of mushroom soup
1 cup sour cream
⅓ cup milk
2 (6-oz) boxes or bags dry stuffing mix, such as Stove Top
1 (16-oz) bag frozen green beans
Your favorite chicken seasoning, garlic & herb seasoning, or a combination of garlic powder, onion powder, salt and pepper
Instructions
Layer the chicken. Place the chicken thighs in an even layer in the bottom of the slow cooker. Season generously with your favorite chicken seasoning or a combination of garlic, onion, salt and pepper.
Make the creamy sauce. In a separate bowl, whisk together the cream of chicken or mushroom soup, sour cream, and milk. Season with a little of the same seasoning used on the chicken.
Add the sauce. Pour the creamy mixture evenly over the chicken and spread it into an even layer.
Add the stuffing. Sprinkle the dry, uncooked stuffing mix evenly over the creamy layer. Do not stir.
Add the green beans. Layer the frozen green beans over the stuffing and season lightly.
Leave it alone! Do not mix the layers. That’s the magic. 😉
Cook. Cover and cook on LOW for 5–7 hours, or until the chicken is cooked through and tender.
Serve. Spoon everything onto a plate and serve with your favorite comfort-food sides. Mashed potatoes, mac & cheese, cranberry sauce, cornbread, or a simple salad all work beautifully.
