Ingredients
2 lbs boneless skinless chicken thighs
1 cup orange marmalade
½ cup BBQ sauce (Sweet Baby Ray's works great) or hoisin sauce
¼ cup low-sodium soy sauce
2 cloves garlic, minced
1 tsp grated fresh ginger (or ½ tsp ground ginger)
1 tbsp rice vinegar
1 tbsp sesame oil
¼ tsp red pepper flakes (optional)
Instructions
Whisk all sauce ingredients together.
Add chicken thighs to slow cooker.
Pour sauce over chicken.
Cook on LOW for 8–10 hours.
Shred chicken with two forks.
If you'd like a thicker sauce, stir in:
1 tbsp cornstarch
1 tbsp cold water
during the last 20–30 minutes.
